Bulls will be on the “Manzo” diet of peas, pressed wine grapes, garbanzo beans, lentils, barley, oats, grass.
Manzo will connect the client to Dr. Phill Bass for consultation on cuts & instructions for the butcher.
The client is welcome to visit the butcher during harvest.

How much beef will I receive, and how is it packaged?
You’ll receive anywhere from 250-500 pounds (guaranteed) when you purchase a half or whole fassone bull; however, our bulls often dress out more and the final shipment could be closer to 300-600 pounds based on the reservation. Our fassone is professionally butchered at a USDA-inspected facility, vacuum-sealed for freshness, and delivered frozen in individually portioned packages, making storage and meal prep seamless.
Can I customize my cut preferences?
Yes! Depending on the option you choose, there is flexibility in selecting specific cuts and portion sizes. If you opt for a fully customized experience, you’ll work directly with our meat scientist Dr. Phill Bass and our butchers to tailor your order to your culinary preferences.
Do I need to take delivery of my whole reservation at once?
No — we offer complimentary cold storage for your reservation, allowing you to receive your beef on your schedule. We can drop-ship your holdings when and where you choose, ensuring you always have premium fassone beef available without worrying about freezer space.
How is the beef shipped, and when will I receive it?
Your first shipment is delivered in a custom-designed heirloom trunk, handcrafted to your specifications, creating a truly bespoke experience. All subsequent shipments are sent in a Manzo-branded insulated, temperature-controlled container to ensure peak freshness upon arrival. The timeline for delivery depends on the option you select—some clients receive their beef immediately, while others opt for a more customized experience that includes a longer preparation period.
